Italiano Chicken Pasta & Vegetable Medley |

This is a go to recipe in my house. It can be thrown together really quickly and even my very picky kids (and husband) love it! Ingredients:
1 lb boneless skinless chicken breast, cut up |
2 (14 1/2 ounce) cans reduced-sodium fat-free chicken broth |
1/2 teaspoon garlic powder |
1 tablespoon italian seasoning |
3 cups whole wheat spiral pasta, uncooked |
1 (16 ounce) package frozen mixed vegetables |
2 tablespoons reduced-fat parmesan cheese |
Directions:
1. Cook chicken in nonstick skillet until browned, stirring often. 2. Add broth, Italian seasoning and garlic. Heat to a boil. Stir in pasta. Cook over medium heat 10 minutes. 3. Add vegetables and cheese. Heat to a boil. Cook 5 minutes more or until pasta is done. 4. Sever with additional cheese if desired. |
