This is more of a how to put together a GREAT lil 2 bites of Italian yumminess than a recipe...but, wow, did it turn out to be delicious. These, to me, are like an Italian version of an English tea time sandwich. Read more . :) Ingredients:
1 loaf thin sliced herb bread(it's okay to use day old, cus you're gonna give 'em a quick heat up, anyway |
6oz thin sliced specialty spicy italian cured meats(salami, calabria, capiccola, pancetta, etc) |
6oz gruyere or fontina cheese, sliced thin |
high quality olive oil |
1 clove garlic, cut in half |
2 pears, cored and sliced thin |
6 peppadews, sliced into strips(or sub 1-2 roasted red peppers, also in strips) |
fresh arugala or other bitter leaf green |
Directions:
1. Cut edges off of all slices of bread to create a single square with no crusts, from each piece. 2. Layer bottom halves of all pieces with a slice of pear, 2-3 small slices of meat(depending on thickness and size of each pieces....mine were very thinly sliced and fit the pieces of cut bread perfectly :) 3. Add a slice of cheese, then a couple slices of peppadews, then a bit of arugala. 4. Drizzle inside of all the top halves of bread with a bit of olive oil then rub lightly with cut end of garlic. 5. Place on cookie sheet or baking stone in a 250 oven and toast for about 3-7 minutes, just until cheese is melty and breads are lightly toasted. 6. These are wonderful with wine. :) |
