Italian White Beans with Chicken |

QUICK & EASY!! This recipe is from Betty Crocker's Easy Casseroles & One Dish Meals . If you need a dinner FAST this is your meal. It is done in a flash, but with such exotic flavor, you'd think it took hours. Could easily be a vegetarian dish if you substitute mushrooms or tofu in place of the meat. Ingredients:
1 tablespoon olive oil or 1 tablespoon vegetable oil |
1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves |
1 clove garlic, finely chopped |
2 cups cut up cooked chicken or 2 cups cooked turkey |
1/2 cup chopped drained sun-dried tomato packed in oil |
1/4 cup sliced ripe olives |
2 (15 ounce) cans great northern beans, rinsed and drained (you may substitute 2 cups cooked pasta instead of the beans) |
Directions:
1. Heat oil in 10-inch skillet over medium heat. 2. Cook basil and garlic in oil for 3 minutes, stirring frequently. 3. Stir in remaining ingredients. 4. Cook, stirring frequently, until hot. |
