Italian Wedding soup is one of my favorites for any time of year. Great with a nice crusty loaf of bread. Ingredients:
for the meatballs |
1lb ground beef |
1-2 tbsp parmesan cheese |
garlic powder |
oregano |
basil |
pepper |
salt |
all seasonings to taste |
soup |
8 cups of chicken stock |
4 cups of water |
1 tbsp minced onion |
oregano |
basil |
garlic powder |
1/2-3/4 cup of asini de pepe (little tiny round noodles) |
1-2 tbsp parmesan cheese |
1 bag of frozen spinach (or half a bag of fresh) |
Directions:
1. Combine chicken stock, water, minced onion, parmesan, oregano, basil and garlic powder set on medium heat. 2. Mix together the ground beef, garlic powder, oregano and basil. 3. Roll into small 1 inch meat balls, drop into simmering stock. 4. Add the pasta and let cook until the pasta is tender. 5. Add spinach and parmesan and allow spinach to thaw and heat through. 6. Serve with a good bread on the side. |
