Ingredients:
1/3 cup(s) italian dressing |
1 can(s) italian style stewed tomatoes, drained |
2 lg onions, chunked |
1 lg red pepper, chopped |
1/2 cup(s) shredded parmesan cheese |
1 sm eggplant, peeled and cubed |
1 zucchini, cubed |
Directions:
1. Heat dressing in large skillet. Add onion and cook until tender. Add eggplant and cook 3 minutes. Add zucchini and pepper and cook for 3 minutes more. 2. Add tomatoes and bring to a boil. Reduce heat to low, cover. Simmer until veggies are tender. Pour mixture in a casserole dish and top with cheese. Bake at 350 for 15 minutes. |
