Simple but delicious veggie soup with meat and tomato base. Serve with garlic bread and lots of parmesan cheese. One of my mom's favorites. Awesome leftovers. Ingredients:
2 lbs ground meat (beef, pork, turkey, or any combination thereof) |
2 cups beef stock |
2 large cans diced tomatoes |
1 can tomato sauce |
red wine, to taste |
1 large bay leaf |
handful of chopped parsley (dry or fresh) |
1 or 2 cans of green beans |
3-4 sliced carrots |
3-4 sliced celery stalks, with diced tops/leaves/hearts |
2-3 sliced small zucchini |
Directions:
1. Brown the meat, drain fat 2. Add wine to meat first & let boil for awhile to cook off alcohol. 3. Add the rest of the stuff 4. Simmer at least 30 minutes, even better if you can give it an hour. |
