Nice casserole adapted from Rachel Ray Ingredients:
10 ounce frozen chopped spinach |
16 ounce pasta |
1 tbl extra virgin olive oil |
2 tbl smart balance |
1 medium onion |
5 garlic cloves |
3 tbl flour |
1 1/2 cups chicken stock |
2 cups skim milk |
1 tbl hot sauce |
1 tsp mustard |
12 ounce tuna in water |
4 ounces romano cheese |
Directions:
1. Microwave frozen spinach for 6 minutes 2. Cook pasta 3. Heat skillet with EVOO and butter. Add Onion and garlic for 5 minutes. Sprinkle flour and wisk in stock. Wisk in milk and bring to a bubble. Reduce heat add mustard and hot sauce. Simmer 2-3 minutes, add spinach. 4. Preheat broiler. 5. Add tuna and pasta. 6. Transfer to casserole dish, top with cheese and broil for 2 minutes. |
