Italian Tomato & Cucumber Salad

Replaced 3 tablespoons olive oil with flax seed oil. Went from C- to A.
Ingredients:
5 roma tomatoes, room temperature
2 cucumbers
2 basil leaves
2 tablespoons olive oil
2 tablespoons flax seed oil
1/4 cup apple cider vinegar
1 clove garlic
1 tablespoon capers
1 salt and pepper, to taste
Directions:
1. Cut tomatoes into wedges.
2. Cut cucumbers in 1/2 inch pieces.
3. Tear little pieces of your basil.
4. Mince the garlic.
5. Add the remaining ingredients and stir together gently in a salad bowl.
6. Serve.
