I threw this dinner together one night with ingredients I had on hand. You can vary it to suit your tastes (add cheese on top, or use tomatoes with chilies and cilantro instead of parsley). Ingredients:
1/2 lb penne pasta (uncooked) |
1 -2 tablespoon olive oil |
1/2 lb boneless skinless chicken breast |
1/2 cup yellow onion, sliced |
1 (15 ounce) can diced tomatoes with onion garlic and basil |
2 tablespoons fresh parsley, chopped |
Directions:
1. Cook pasta in boiling water until al dente. 2. Meanwhile, heat olive oil in a large skillet over medium high heat. Cut chicken into 1 inch cubes and add to skillet along with onions. Cook until chicken is browned on all sides and onions are softened. Add tomatoes and reduce heat to medium-low. Gently mash tomato pieces with a spoon or fork to break them up slightly. Simmer 5-10 minutes while pasta finishes cooking. 3. Combine chicken mixture with drained pasta and sprinkle with fresh parsley. |
