super tasty low-fat salad dressing . . .very good on garden salad Ingredients:
6 sun-dried tomatoes (not packed in oil) |
1 tomato, chopped |
1 garlic clove, minced |
1/4 cup fresh basil, chopped |
1/4 cup water |
2 tbsp balsamic vinegar |
1/4 tsp salt |
Directions:
1. Cover sun-dried tomatoes with boiling water in a heatproof bowl and set aside. 2. Combine the chopped fresh tomatoes, garlic, basil, water, vinegar, and salt in blender or food processor. 3. When sundried tomatoes have softened, drain and add them to the other ingredients and puree the mixture until smooth. 4. Covered and refrigerated, this dressing will keep for about a week. |
