This dish was inspired by the love of Italian & South American Foods Ingredients:
polenta |
italian sausage |
pomadoro red sauce |
provolone cheese |
parmesan cheese |
fresh basil |
kosher salt |
fresh garlic |
good olive oil |
Directions:
1. Prepare polenta according to package instructions 2. Season polenta with salt pepper and Parmesan cheese 3. When cooked transfer to 1/2 sheetpan lined with parchment paper and coated with Olive Oil Spread into approx 1/2 inch 4. Refrigerate until firm 5. Pan fry italian Sausage drain excess fat and crumble 6. Prepare Pomadoro Red Sauce 7. Place even layer of sauce over polenta 8. place even layer of sausage on top of sauce 9. top with equal parts parmesan & Provolone cheese 10. starting at the short end of sheet pan gently begin to roll 11. when you have a single layer roll cut and repeat 12. cut rolls length wise into fours 13. place rolls in 2 half hotel pan with lined with pomadoro sauce 14. top rolls with sauce and both cheeses 15. Cover and bake at 300 for 30 minutes 16. uncover and bake until top is golden brown 17. let sit for 15 minutes and top with Fresh torn basil 18. Chefs note: 19.
