If you don't lock your car doors in the fall....you find the car full of zucchini in the morning....people just don't know what to do with it all! Quantities are up to you......make a lot and heat up later or freeze for later! Read more ! This is incredibly easy and was created in self defense of an over abndance of zucchini! Ingredients:
zucchini, sliced about 1/4 or a little more |
use medium to large zucchini only -not big fat seeded ones-yeck-dry and tough- don't let anyone palm them off on you |
onions, sliced thinly......sweet or yellow...you choose |
tomato sauce (not pasta sauce) |
italian seasoning |
mozzarrella, shredded |
Directions:
1. Slice zucchini and onion and parcook separately in the microwave. 2. Do not over cook zucchini slices, you want them to be a little crunchy in the finished product. 3. In a casserole or baking pan, depending on the quantity you're making: place a layer of zuchhini and then a layer of onion 4. Pour some tomato sauce over the zucchini and onion, you don't have to cover it completely 5. Sprinkle some Italian Seasoning over the tomato sauce to your taste 6. Sprinkle a good amount of cheese over the Italian Seasoning and then repeat layers until zucchini and onion are used up.... ending with cheese. 7. Bake at 350 for 45 minutes to an hour or until hot and bubbly |
