This is a true salad and meant to be eaten out of a bowl with a fork. Would be lovely served with some pita chips. I made a version of the Garlic Lemon Pita Chips Recipe from this site. Read more . Makes a good quick healthy and lo-cal lunch. Ingredients:
1 can italian tuna in olive oil |
1tbsp finely chopped carrot |
1 tbsp finely chopped celery heart w/leaves |
2 tbsp chopped red sweet pepper |
2 tbsp chopped fresh parsley |
1 tbsp red wine vinegar |
juice of 1/2 small lime |
salt and pepper |
dash of hot sauce |
1 cup iceberg lettuce torn from the center of the head |
Directions:
1. Drain tuna leaving about 1 Tbsp extra oil. 2. Combine tuna with carrot, celery, red pepper and parsley. 3. Stir to combine ingredients. 4. Add vinegar, lime juice, a liberal amount of salt, a bit of pepper and a dash of hot sauce. 5. Stir until everything is evenly mixed. 6. Add pieces of iceberg lettuce. 7. Toss gently and serve. 8. *the lettuce give the salad some moisture and some crunch without interfering with the flavours, so it is important to use iceberg. |
