Italian Style Stuffed Peppers |

This is a really nice main dish but would also do as a side dish. The flavour really changes depending on which cheese you choose to use. Enjoy! Ingredients:
2 large red, yellow or orange peppers |
2 tbsp. olive oil |
1/4 cup each diced celery and onion |
1 lb. mushrooms, finely chopped |
4 cloves garlic, minced |
1/2 cup dry bread crumbs |
1/4 cup each grated parmesan cheese and ketchup |
1 tsp. each dried basil and oregano (fresh would be lovely too!) |
1 cup grated mozzarella or crumbled feta |
Directions:
1. Cut peppers in half lengthwise and scoop out seeds. 2. In large skillet heat oil over medium heat, sauté celery and onion for 1-2 minutes, or until softened. 3. Add mushrooms and sauté another 3-4 minutes or until starting to brown. 4. Stir in garlic and remove from heat. 5. Stir in breadcrumbs, Parmesan, ketchup, basil, oregano and either the mozzarella or the feta cheese. 6. Spoon mixture into peppers and place in shallow baking pan. 7. Bake 20 minutes in 375 degree oven until peppers are tender and stuffing is golden. 8. Enjoy! |
