I am a Quinoa fanatic! I just love this versitile grain...so healthy for you and lots of different ways to prepare it. I just threw this one together one day and had it for dinner. Ingredients:
1 c. quinoa |
2 c. veggie stock (or broth) |
1/2 small onion fine diced |
1 lg clove garlic minced |
1 can (aprrox 14 oz) fire roasted diced tomatoes (drained) (i like hunts or muir glenn) |
1/2 tsp. dried oragano |
1/2 tsp. dried basil |
about 10 fresh basil leaves chopped |
1 tblspn olive oil |
salt and pepper to taste |
crushed red pepper flakes to taste |
Directions:
1. Cook quinoa in veggie stock until stock is all absorbed and quinoa is tender. 2. In a sautee pan, heat olive oil and sautee onion and garlic for about 2-3 minutes. 3. Stir sauteed onions, garlic, tomatoes, spices, and fresh basil leaves into the cooked quinoa. 4. Salt/pepper/crushed red pepper flakes to taste. 5. Serve and enjoy. 6. Great leftover! |
