Bone-in pork chops are delicious when prepared in the Italian style. Serve these chops with rice and your favorite green vegetable. Ingredients:
4 (6-ounce) bone-in center cut pork chops (about 1/2 inch thick) |
2 garlic cloves, halved |
1 teaspoon dried italian seasoning |
1/4 teaspoon salt |
cooking spray |
1/2 cup grape tomatoes, halved |
1/2 cup chopped bottled roasted red bell peppers |
1/4 cup chopped fresh parsley |
2 tablespoons capers, drained |
2 tablespoons cider vinegar |
1/8 teaspoon crushed red pepper |
Directions:
1. Rub both sides of pork chops with garlic halves; sprinkle with Italian seasoning and salt. Coat pork chops with cooking spray. Place a large nonstick skillet over medium heat until hot. Add pork chops, and cook 6 minutes on each side or until done. Transfer pork to a serving platter; keep warm. 2. Add tomatoes and remaining 5 ingredients to pan; cook 1 minute or until thoroughly heated. Spoon over pork. |
