Italian Style Mixed Salad |

This is an old woman's weekly recipe, I make it a lot during the summer months. It is a bit like a roasted vegetable salad. I use bottled Italian dressing, but you can make your own and use it if you prefer. Ingredients:
125 g green beans |
125 g button mushrooms |
12 small onions |
1 green pepper |
2 carrots |
1 small cauliflower |
1 small eggplant |
2 stalks celery |
1/4 cup oil |
1/2 cup italian dressing |
1/4 cup olive oil |
1 garlic clove, minced |
2 teaspoons prepared mustard |
2 teaspoons sugar |
Directions:
1. Trim and string beans, cut into 5cm (2in) lengths. Wash mushrooms, and slice: quarter onions: remove stalk from pepper, cut into strips: peel carrots, cut diagonally into 2.5cm (1 in) chunks: divide cauliflower into florets: cut unpeeled eggplant into 2.5 2. (1 in) cube: cut celery diagonally into 2.5 (1in) slices. 3. Saute vegetables in hot oil for about 5 minutes and put into a large salad bowl. 4. Add dressing and toss lightly. 5. TO MAKE DRESSING:. 6. Combine all ingredients in a screw top jar, shake to combine well. |
