experimental Ingredients:
4 zucchinis |
4 links italian turkey sausages |
1/2 cup bread crumbs |
3/4 cup mushrooms, diced |
1/4 onion, diced |
2 eggs, beaten |
1/4 cup parmesan cheese |
4 cloves garlic |
1/2 tsp basil |
Directions:
1. Wash and cut off ends of zucchini. Cook in boiling water for 7 minutes. Cut in half lengthwise, scoop out pulp leaving shell. (Save the pulp). 2. Brown the sausage, onion and mushrooms. Drain the fat. 3. Mix in the bread crumbs, eggs, zucchini pulp, paremesan and spices. 4. Arrange zucchini shells on a baking pan. Fill each with sausage mixture. 5. Bake at 350 degrees for 30 minutes. Let cool and serve warm. |
