These are actually good cold or at room temperature as well as hot. From submitted by rob Ingredients:
6 medium tomatoes |
3 pkgs frozen chopped spinach, thawed & drained |
1 medium onion, diced |
2 cloves garlic, minced |
1 egg, beaten |
1/3 c parmesan cheese |
1/4 c dry bread crumbs |
4 oz part skim mozzerella chesse, shredded |
1 tbs italian seasoning |
1/4 t red pepper flakes |
3 tbs seasoned bread crumbs |
4 oz part skim mozzerella chesse, shredded |
2 tbs butter, diced |
Directions:
1. Cut tops off tomatoes and scoop out seeds. Season inside of tomatoes with salt and pepper. Mix next 9 ingredients and pack tomatoes tightly. Place in greased casserole. 2. Sprinkle seasoned bread crumbs, shredded mozzerella and diced butter on top. 3. Bake, uncovered, for 25-30 minutes. Broil 2 minutes to allow tops to slightly brown. |
