Italian Steamed Vegetables

Okay-I am NOT a vegetable person, but have made a lifestyle change to eat healthier and LOSE weight! So far, it has been 4 weeks and I have lost 13 pounds so it appears to be working. I experimented a little with some veggies and found a recipe I really like and actually eact seconds on and sometimes even CRAVE. Yup, CRAVE. This coming from an avid Veggie hater!
Ingredients:
1 yellow squash
1 yellow sweet onion
1 orange bell pepper
20 sugar snap peas
12 young fresh baby carrots
2 tablespoons light italian dressing
Directions:
1. Slice the squash into thin circles, chop the onion and orange pepper into large chunks. If carrots are baby carrots, slice them into small circles, if they are PETITE (very small) baby carrots, add them into the bag whole. Place all vegetables into a Ziplock (or equivalent) microwave steam bag. Pour Light Italian Dressing over vegeatbles. Seal bag and shake dressing around so all vegetables are lightly coated. Microwave 6-7 minutes. Let sit one minute. Pour onto your plate and enjoy. They are all crisp and seasoned to perfection!
