You may adjust the garlic to suit taste, I like to also add in some cayenne pepper for a little heat. Ingredients:
2 -3 tablespoons olive oil |
2 (10 ounce) packages frozen chopped spinach, thawed and drained |
3 large garlic cloves, chopped (or to taste, do not finely mince) |
1/2 cup italian seasoned breadcrumbs (see my kittencal's seasoned dry italian breadcrumbs) |
1/3-1/2 cup grated parmesan cheese |
salt & freshly ground black pepper (to taste) |
Directions:
1. Heat oil oil in a large skillet over medium-high heat. 2. Add in spinach and chopped garlic; saute stirring for about 10-12 minutes or until all the liquid from the spinach evaporates. 3. Add in the breadcrumbs and Parmesan cheese; mix to combine and heat through. 4. Season with salt and fresh ground pepper to taste. |
