Italian Sausage with Peppers and Onions |

Make a superquick supper by serving sausage and veggies over crisp French bread. Add a green salad, if you like. Ingredients:
olive oil-flavored vegetable cooking spray |
3/4 pound smoked italian turkey sausage, cut into 3/4-inch-thick slices |
2 cups sliced onion |
1 cup sliced green pepper |
1 cup sliced sweet yellow pepper |
1 cup fat-free, no-salt-added spaghetti sauce |
1 (8-ounce) can no-salt-added tomato sauce |
1/2 cup water |
1 tablespoon minced garlic |
1 teaspoon dried italian seasoning |
6 (1-inch-thick) slices french bread, toasted |
hot sauce (optional) |
Directions:
1. Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add sausage, onion, green pepper, and yellow pepper; cook 10 minutes, stirring occasionally. Add spaghetti sauce and next 4 ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes. Spoon turkey mixture evenly over bread slices. Sprinkle with hot sauce, if desired. |
