Italian Sausage Vegetable Soup |

Easy to do with fabulous taste! Ingredients:
2 tablespoons olive oil |
1 lb italian sausage |
1 small onion |
1 (15 ounce) can fire roasted diced tomatoes |
6 cups chicken broth |
2 carrots, chopped |
2 potatoes, cut in 1/2-inch cubes |
1/2 cup orzo pasta |
8 ounces frozen mixed vegetables |
1/2 teaspoon italian seasoning |
salt and pepper |
Directions:
1. Remove sausage from casing, crumble and saute in olive oil. 2. Chop onion fine and add to pan. 3. Puree tomatoes in blender and add along with broth and carrots. 4. Bring to a boil, lower heat and simmer for 20 minutes. 5. Add potatoes, orzo, mixed veggies and Italian seasoning. 6. Simmer for 20 minutes more or until pasta and vegetables are tender. 7. Taste and add salt and pepper as needed. 8. If soup becomes too thick, add more broth. |
