This is a light but hearty spicy soup. It has healthy beans and spinach, and fat and calories are reduced by using evaporated milk. Serve with salad and good bread. Ingredients:
1 small onion |
1 lb italian sausage |
pinch of red chili flakes as desired |
4 cups chicken broth |
1 can evaporated milk |
1 can white beans |
1 bag baby spinach |
Directions:
1. Sweat onion until translucent 2. Add sausage and break up to brown, draining fat as needed 3. Add red chili flakes 4. Add chicken broth and bring to a simmer 5. Add beans and milk 6. Continue to simmer and add spinach 7. Heat completely through until spinach is fully wilted. |
