Italian Sausage Soup

smells wonderful when simmering, and tastes even better!
Ingredients:
2 pounds bulk italian sausage ( out of cassings)
4 cloves of garlic chopped
6 (15 oz cans) of beef broth ,unsalted
2 (15 oz cans)italian style stewed tomatoes
2 (14.5 oz cans)great northern beans undrained
3 small unpeeled zucchini cut into 1 pieces
2 cups of carrots sliced
a 1 lb bag of fresh spinach ,torn or a frozen package of chopped spinach
salt and pepper to taste
Directions:
1. spray bottom of soup pot with pam,
2. brown sausage with garlic, stirring so sausage dosen t stick
3. stir in broth, tomatoes and the carrots
4. season with salt and pepper to taste
5. cover and simmer 20 minutes
6. stir in beans with the liquid from the cans and the zucchini
7. cover and simmer 20 minutes or until zucchini tender
8. add spinach soup is ready when spinach gets soft , about 3 minutes ( If using defrosted frozen spinach) it takes about 5 minutes to warm the spinach
9. when eating, sprinkle parmesan cheese on top
10. serve with a crusty loaf of warm bread!!! Perfect winter meal!
