Italian Sausage, Rice & Greens Soup |

A flavorful northern Italian soup Ingredients:
1/2 lb pork sausage, crumbled |
1/4 cup lard |
1 small onion, finely chopped |
1/2 lb broccoli rabe |
2 quarts chicken stock |
1 cup arborio rice |
1 tbspn butter |
1/4 cup grated parmigiano |
Directions:
1. Blanch and roughly chop broccoli rabe. 2. Heat lard in large pot over medium-high heat; add onion and sausage. Cook until onion is soft and browned (about 5?7 minutes). 3. Add broccoli rabe, raise heat to high, and cook for 5 minutes. Remove excess fat. 4. Add stock, bring to boil, and stir in rice. Cook at an active simmer until the rice is almost completely cooked (about 15 minutes). 5. Add butter and stir until absorbed. Season to taste. Grate Parmigiano over and serve. |
