Italian Sausage & Lentil Stew |

From Swanson. Haven't tried it yet. Ingredients:
1 lb sweet italian sausage, cut into chunks |
1 large onion, chopped |
2 large carrots, sliced |
2 garlic cloves, minced |
2 (14 ounce) cans vegetable broth |
2 cups potatoes, diced |
1/2 cup dried lentils |
1 bay leaf |
2 teaspoons oregano |
2 cups broccoli rabe, coarsely chopped |
Directions:
1. Spray saucepan with cooking spray. Add sausage and cook until browned. 2. Add onion, carrots and garlic and cook until tender. 3. Add broth, potatoes, lentils, bay leaf and oregano. Heat to a boil. Cover and cook over low heat 40 min or until lentils are done. 4. Stir in broccoli and cook 5 minute Remove bay leaf. |
