I can't wait to make this one... ned to go get some hot sausage at the store... I will put the tomatoe sauce on the top.... the recipe is from Charles Gipe, Jr., Executive Chef at Hershey Entertainment Complex Ingredients:
3 hot italian sausage links, cooked, cut into 1/4 dice |
4 ounces melted butter |
2 ounces olive oil |
2 cups red skin potatoes, boiled, cooled, cut in 1/4 dice |
1/2 cup onion, cut into medium dice |
1/8 cup grated parmesan cheese |
salt and pepper, to taste |
6 eggs |
Directions:
1. In a 10 non-stick pan, heat butter and olive oil over medium-high heat. Add potatoes and onions. Cook until golden brown. Add the cooked sausage. Mix cheese, salt and black pepper, and eggs in a bowl. Pour mixture over potatoes and sausage. Cook until it starts to pull away from the sides, flip, and reduce heat until the frittata is done. Cut into 4 wedges and serve. 2. Notes: Options: top with a tomato sauce |
