I first tasted this delightfull homestyle casserole at a potluck supper 20 years ago. I hunted down the cook, but she made this without a recipe. Here is my version, in recipe form. Ingredients:
1 1/2 lbs italian sausage, cut into 1 1/2 inch pieces |
1 large onion, sliced |
3 carrots, sliced |
3 baking potatoes, peeled and cut into chunks |
1 (28 ounce) can diced tomatoes |
salt and pepper |
Directions:
1. Preheat oven to 350°F. 2. Combine ingredients in a large oven proof casserole. 3. Cover with foil and bake 1 1/2 hours. |
