This soup is a family favorite! Hearty and very flavorful, goes perfect with a crusty loaf of bread and the rest of the bottle of wine that you use for the recipe! My sister sent me this recipe, so I'm not sure where she got it. Read more ...but it's wonderful. Enjoy. Ingredients:
1 lb. italian sausage, out of casing |
1 cup chopped onion |
2 garlic cloves, sliced thin |
5 cups beef stock |
2 cups chopped tomatoes (i use romas) |
1 - 8 oz. can tomato sauce |
1 lb. cheese tortellini |
1 large zucchini, cubed |
1 large carrot, sliced |
1 green pepper, diced |
1/2 cup dry red wine |
2 tbsp. basil |
2 tbsp. oregano |
fresh grated parmesan cheese |
Directions:
1. Saute sausage in large stock pot over med-hi heat until cooked through, crumbling while cooking. Remove from pot and set aside. 2. Drain most of the grease, add onion and garlic and saute until translucent. 3. Return sausage to pot. Add all remaining ingredients EXCEPT tortellini and cheese. 4. Simmer about 40 minutes. 5. Add tortellini and cook until tender. Season to taste with salt and pepper. 6. Ladle servings into bowls and sprinkle with cheese. 7. DELICIOUS! |
