Italian Sausage and Spinach Scramble |

I never thought I would crave spinach, but with this dish, I do! Excellent as a side dish with a meal, or as a tasty brunch entree. Ingredients:
1/2 cup chopped red pepper |
4 -5 ounces frozen spinach or 1/2 cup fresh spinach, torn into almond-sized pieces |
pepper |
1 lb ground italian sausage |
1/4 cup onion, chopped |
8 large eggs, lightly beaten |
1/2 cup feta cheese, crumbled |
Directions:
1. Spray frypan with non-stick spray. 2. Add the sausage pieces, bell pepper, and onion. Cook, stirring, until the sausage has browned and the pepper and onion are soft, 3-4 minutes. 3. Stir in the spinach and cook about 1 minute. 4. Pour in eggs and season with pepper. 5. Reduce heat to medium-low, sprinkle the feta cheese on top, and cook, stirring, until the eggs have just set, approximately 2 minutes. 6. Serve immediately. (I also like it warmed up). |
