I actually have no desire to stuff my own sausage, and don't even have a meat grinder, but since my wife and I are on a no added-sugar diet, this was one of the few recipes I wound without sugar in the ingredients.
Ingredients:
1 lb ground pork
1 1/2 teaspoons kosher salt
2 teaspoons paprika
1 teaspoon garlic granules
1/2 teaspoon fennel seed
1/2 teaspoon black peppercorns
Directions:
1. Pulse in a spice grinder until a uniform consistency is reached. If you wish for the fennel seeds to remain whole and visible, simply hold them back until after grinding is finished.
2. Mix into chilled ground pork, by hand preferably.
3. Chill 3 hours before using to allow flavors to marry.
4. Use immediately or form into patties, block, small meatballs, whatever, and freeze.
