Italian Rice Balls

Delicious rice balls, use as an appetizer or a side dish. I even make these in my Foods class. the kids love them.
Ingredients:
6 cups water
3 cups carolina rice
2 tbsp. butter
1 pkg. of shredded mozzarella cheese
5 beaten eggs
bowl of bread crumbs
bowl of marinara sauce
1 cup grated romano cheese
salt and pepper
Directions:
1. Boil water, add salt, 1 Tbsp. butter and rice.
2. Cook for 20 minutes.
3. After the rice sets a short time; add 2 beaten eggs, 1 Tbsp. butter, one tsp salt, Marinara sauce for color, (colors the rice a nice pink) Mozzarella, and grated Romano.
4. Mix until well blended and cheese begins to melt.
5. Form balls with rice mixture.
6. Dip the rice balls into the remaining 3 beaten eggs, and then roll in bread crumbs.
7. Deep fry until golden.
