This is an old recipe that I like to make when I'm lazy, which is more often than it should be Ingredients:
3/4 cup uncooked rice |
2 tbsps bacon drippings |
3/4 lb. ground beef |
1 medium onion, chopped |
1/2 green pepper, choppoer |
1/3 cup chopped celery |
2 cups cooked tomatoes |
1/2 cup water |
1-1/2 tsp salt |
dash of pepper |
2 tsp or less sugar |
Directions:
1. Follow directions on pkg for cooking rice. 2. Heat drippings in heavy skillet; add rice, ground beef and onion and cook with frequent stirring until meat and rice are brown and onion is soft. 3. Add green pepper and celery and cook slowly 5 minutes, stirring frequently. 4. Add remaining ingredients; cover and simmer gently for 30 minutes or longer, or until rice is perfectly tender. |
