Italian quesadilla Ingredients:
2 tablespoons olive oil |
1 small onion, thinly sliced |
1 pinch salt |
1 pinch black pepper |
4 flour tortillas |
2 cups shredded fontina cheese |
1/4 cup roasted red peppers, drained and patted dry |
1/4 cup chopped fresh parsley leaves |
1/4 cup shredded parmesan |
Directions:
1. Preheat the oven to 300degF. 2. Heat 2 tablespoons oil in a heavy large skillet over medium-low heat. Add the onions and cook until they are golden brown, about 20 minutes. Season the onions, to taste, with salt and pepper; set aside. 3. Sprinkle some Fontina over half of a tortilla. Arrange some bell peppers and sautéed onions on top of the Fontina. Sprinkle with chopped parsley and Parmesan. Sprinkle more Fontina over. Fold the clean half over the filling to cover and press gently to seal. Repeat with remaining tortillas evenly dividing the filling ingredients. 4. Place on greased baking sheet and bake for 10-15 minutes, until golden brown. |
