This is a great side dish for almost any italian recipe. Ingredients:
8 large red potatoes (about 5 pounds) |
1 large can of diced tomatoes |
salt and pepper to taste |
1 cup chopped fresh italian parsley leaves chopped |
1 medium chopped green onion |
3 large cloves garlic, thinly sliced |
1 heaping teaspoon salt |
1 tablespoon italian spices |
1/2 teaspoon dry mustard |
1 tablespoon sugar |
1 tablespoon worcestershire sauce |
1/4 cup olive oil |
1/4 red wine vinegar |
Directions:
1. Peel and cut potatoes in half and place into a large pot, cover with water salt generously and bring to a boil. 2. Cook potatoes over medium low heat until tender but still firm. 3. Drain water, put potatoes into serving bowl 4. Combine all the other ingredients with potatoes, stir well and let sit all day. 5. Serve warm but not hot. |
