I had some leftover canned tomatoes & wanted to use them up somehow with potatoes, I found this recipe in a Country Kitchen potato cookbook. Ingredients:
500 g potatoes, cubed |
1 tablespoon olive oil |
2 garlic cloves, chopped |
425 g tomatoes |
2 tablespoons fresh oregano, chopped |
1/4 teaspoon ground black pepper |
Directions:
1. Cook potatoes in boiling water until tender but not soft, drain. 2. Heat oil in a saucepan and cook garlic until golden, add tomatoes, including liquid from can and oregano, simmer until thickened. Season with pepper. 3. Arrange potatoes in a warmed serving dish & top with tomato sauce. |
