These were so good, next time I will double the recipe. Ingredients:
2 cups 1-inch cubed unpeeled maine baking potatoes (approx. 3 med.) |
3/4 cup finely chopped onion (, 1 1/2 med.) |
1/2 cup finely chopped carrot (, 1 med.) |
1/2 cup low sodium chicken broth |
2 tablespoons tomato paste |
1/4 teaspoon pepper |
2 tablespoons parsley |
1/4 teaspoon salt |
2 cloves garlic |
Directions:
1. Cook all ingredients except parsley in 2 quart saucepan over medium low heat 25 to 30 minutes. 2. Stirring occasionally, until potatoes are tender. 3. Stir in parsley. |
