Italian Potato Salad

This is a family recipe that is always a big hit. It's refreshing on a hot summer day and a great alternative to the mayo and mustard versions. Enjoy!
Ingredients:
8 medium size potatoes (peeled and chopped into about 1 in. cubes)
2-3 medium tomatoes
1 cucumber
1 red onion
4 oz. extra virgin olive oil
1 oz red wine vinegar
1 tablespoon oregano
salt to taste (about 2 teaspoons)
Directions:
1. Boil water in large pot and add the potatoes
2. Boil potatoes for 8-10 min. (potatoes should still be firm) NOTE: Do not over cook
3. Drain potatoes and place in large bowl to cool for about 30 min.
4. Chop up tomatoes
5. Slice cucumber and about 1/4 of the red onion
6. Add ingredients to cooled potatoes
7. Pour on the olive oil and vinegar
8. Add the oregano and salt
9. Mix well and serve
10. The potatoes may absorb more liquid depending on the type of potatoes and how long they are cooked. To alter recipe the rule is 1 part vinegar to 4 parts olive oil.
