This recipe comes from my Italian aunt, who every Christmas makes some of the best cookies. You can substitute vanilla and lemon extract for flavor variation. Sometimes it helps to be smarter than a 5th grader when you make these. Ingredients:
1 cup oleo or 1 cup butter |
1 1/3 cups sugar |
6 eggs |
1 1/2 cups flour |
1 1/2 teaspoons baking powder |
1 ounce anise flavoring |
Directions:
1. Melt oleo or butter and mix in sugar. 2. Let mixture cool. 3. Add eggs and flour. 4. Add baking powder and anise flavoring. 5. Add additional flour as needed to make soft dough. 6. Refrigerate dough to make it easier to work with. 7. Drop by spoonfuls onto your pizzelle iron. 8. Cook 1 minute or until lightly golden brown. 9. Let them cool before stacking, this will help make your cookies crisp. |
