Italian Pepperoni Cheese Puffs |

This is really tasty. I got the recipe from a Church friend who served it at a shower a few years back. We love it and hope you do too. Ingredients:
1-1/4 cups water |
1/3 cup shortening |
1-1/2 cups all-purpose flour |
4 eggs |
3/4 cup finely chopped pepperoni (3 oz.) |
3/4 cup finely shredded pecorino romano or parmesan cheese (3 oz.) |
2 tablespoons snipped fresh parsley |
1/8 teaspoon garlic powder |
1/8 teaspoon pepper |
Directions:
1. Grease 2 large baking sheets then set aside. 2. In a large saucepan combine water and shortening then bring to boiling. 3. Add flour all at once stirring vigorously. 4. Cook and stir until mixture forms a ball then remove from heat and cool 10 minutes. 5. Add eggs 1 at a time beating well with a wooden spoon after each addition. 6. Stir in pepperoni, cheese, parsley, garlic powder and pepper. 7. Drop dough by rounded teaspoons 2 inches apart onto prepared baking sheets. 8. Bake at 450 for 17 minutes. 9. Transfer to a wire rack. 10. Serve warm. |
