Italian Pepper, Potatoes and Eggs |

A south Jersey staple. Serve as a sandwich on a hard, crusted roll or as a side dish. Ingredients:
2 -3 white potatoes, chopped in small pieces |
2 green peppers, chopped in pieces |
1 onion, diced |
2 eggs, beaten |
salt and pepper |
1/8 teaspoon sugar |
canola oil |
Directions:
1. In a large frying pan, cook white potatoes and green peppers in oil until tender adding salt, pepper and sugar. 2. When vegetables are tender, add the 2 beaten eggs and stir until egg is cooked. Serve with hot sauce on the side if desired. |
