This is a wonderful Italian style pasta salad. Our family brings it for all of our potlucks and everyone always asks for the recipe. It is very versitile! Ingredients:
1 packet italian dressing or 1 bottle wishbone italian dressing |
16 oz. multi-colored rotini pasta |
1 large can of sliced olives |
2 tomatoes diced |
1 jar artichoke hearts |
3/4 can red kidney beans |
optional |
1 diced red bell pepper |
1/2 to 1 pound cheese mozz – cubed |
1/2 to 1 cup diced salami |
Directions:
1. Cook pasta according to package directions. Rinse under cold water to stop cooking and drain well. 2. If using packaged dressing, prepare 1 packet of Italian dressing as directed. 3. Place pasta in large salad bowl, add dressing and toss gently to coat. 4. Add remaining ingredients to pasta and mix gently. 5. Cover and refrigerate at least 4 hours to blend all flavors. |
