Light pasta salad that's ideal summer side dish for potlucks or picnics. Ingredients:
6 c chicken broth |
1 pkg (16 oz) orzo pasta |
1/3 c olive oil |
1/4 c red wine vinegar |
2 tb lemon juice |
1 tb honey |
1/2 tsp salt |
1/2 tsp pepper |
2 c chopped plum tomatoes |
1 c chopped,seeded,peeled cucumber |
1 c fresh basil leaves,thinly sliced |
4 green onions,chopped |
1/2 c fresh baby spinach |
1-3/4 c (7 oz) crumbled feta cheese |
1/2 c pine nuts,toasted |
Directions:
1. In large saucepan,bring broth to a boil;add pasta. Return to boil. Cook,uncovered,for 10-12 mins or till pasta is tender. Meanwhile,in small bowl,whisk oil,vinegar,lemon juice,honey,salt and pepper. 2. In large bowl,combine tomatoes,cucumber,basil,onions,and spinach. 3. Drain pasta;add to tomato mixture. Drizzle with dressing;toss to coat. Chill till serving. 4. Just before serving,stir in cheese and pine nuts. |
