Italian Mushroom Rice

Ingredients:
1 gallon water
1 teaspoon salt
2 cups white rice
1 3/4 lbs fresh mushrooms, sliced
1/4 cup butter
1/2 cup red wine
salt
white pepper
3/4 cup chopped fresh parsley
Directions:
1. In a large container, bring water to a boil.
2. Add salt and rice and stir.
3. Boil uncovered for 15 minutes.
4. Pour rice into colander and drain.
5. In a seperate saucepan, saute mushrooms in butter and wine.
6. Season with salt and pepper.
7. Add parsley and let wilt lightly.
8. Toss drained rice with mushroom-wine mixture.
9. Put in greased 1-quart Pyrex dish.
10. Cover with foil.
11. Heat thoroughly in a 350F oven about 30-35 minutes.
