1 1/2 quarts chicken broth |
2 cups tomato juice |
2 cups chopped tomatoes |
1/2 cup pearl barley |
3 cups sliced mushrooms |
3/4 cup chopped carrot |
3/4 cup chopped onion |
2 teaspoons minced garlic |
1 teaspoon dried basil |
1 teaspoon dried oregano |
salt and pepper |
sour cream (to garnish) |
Directions:
1. Combine all ingredients except salt, pepper and sour cream in slow cooker. Cover and cook on low for 6-8 hours. 2. Season to taste with salt and pepper. Top each serving with a dollop of sour cream. |
