I took a recipe for some really good meatballs, tweaked it, and turned it into meatloaf. It's delicious. Serve with caesar salad and garlic bread. This recipe was inspired by the Authentic Italian Meatballs recipe by -In*Memory*of*Brats- on . It's his/her recipe with some sausage and fresh garlic added, upped the cheese and parsley...and viola! Meatloaf! Ingredients:
2 lbs extra lean ground beef |
3 mild italian sausage (links, remove casings) |
2 eggs |
1/2 cup skim milk |
1 cup italian breadcrumbs |
1 teaspoon sea salt (you can use regular) |
1 teaspoon fresh ground pepper |
1 teaspoon garlic powder |
2 -3 teaspoons dried oregano |
2 1/2 tablespoons fresh italian parsley |
1 tablespoon fresh garlic (minced) |
2/3 cup fresh parmesan cheese |
Directions:
1. Mix all ingredients up in a bowl thoroughly. Make sure you don't have any clumps from the bread crumbs. 2. Spray a loaf pan with non stick cooking spray. Pack the meatloaf mixture down in the pan. 3. Bake at 350 degrees for 75 minutes or until done. 4. Top with marinara and fresh mozzarella cheese and serve. |
