ITALIAN LOVE CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jackson Estate in Duncanville, Texas in 1997. Ingredients:
18-1/4 ounce package chocolate cake mix |
3 large eggs |
1/3 cup vegetable oil |
4 cups ricotta cheese drained |
1 cup granulated sugar |
1 teaspoon vanilla extract |
3-1/2 ounce package instant chocolate pudding |
16 ounce container frozen whipped topping thawed |
Directions:
1. Preheat oven to 350 then grease and flour a rectangular baking pan. 2. Prepare cake as per package instructions using 3 eggs and 1/3 cup oil. 3. Pour into prepared pan and set aside. 4. Combine cheese, sugar and vanilla in a large mixing bowl then mix until thoroughly combined. 5. Drop in large spoonfuls over cake batter then swirl decoratively through batter with butter knife. 6. Bake for 1 hour then remove from oven and cool down. 7. Meanwhile combine pudding mix and whipped topping then beat by hand until smooth. 8. Frost cake when totally cool then refrigerate 1 hour before serving. |
