Easy dessert starting with a box mix, that may be made the night before and should be refrigerated 6-8 hours before serving. This cake was a hit the first time I made it. Ingredients:
1 box chocolate cake mix |

2 pounds ricotta cheese |
4 eggs |
3/4 cup sugar |
1 tsp vanilla |
icing |
1 cup cold milk |
1 small bocx chocolate instant pudding |
1/4 cup powdered sugar |
1 8 oz container cool whip |
Directions:
1. Preheat oven to 350 degrees F. 2. Prepare cake mix according to package directions and pour into a prepared 13 x 9 inch pan. 3. Beat together the ricotta, eggs, sugar and vanilla until well mixed. Spoon onto cake batter in pan and spread with a knife. 4. Bake at 350 F. for 60 minutes. As cake bakes, cheese filling sinks to bottom. 5. To Prepare the icing: 6. Beat together the milk , pudding and powdered sugar . Fold in cool Whip and spread on cooled cake. 7. Refrigerate for 6-8 hours before serving. |
