From Elsa Petersen-Schelpelern's Salads. Optionally, you can add feta cheese. Ingredients:
2 cups lentils |
1 red onion |
1 pinch pepper |
1 pinch sea salt |
1/2 tsp chives |
1 tsp mint |
1 tbsp cider vinegar |
2 tbsp extra virgin olive oil |
Directions:
1. Put the lentils in the bowl, add the pinch of salt, then the vinegar, oil, and pepper. 2. Add the artichokes and onion, then toss gently. Add salt and pepper to taste, then serve, sprinkled with herbs. |
